Easy & Fast Breakfast Burritos

Breakfast is by far my favorite meal of the day! Especially when you have wild game sausage to go with it!! My mouth just waters thinking about it. This recipe is so fast and super easy. We take these everywhere with us and keep them stocked in the freezer at home for crazy Monday mornings! Kacie loves to eat them for breakfast before school and if we are running late she can eat it in the car. Way better than a pop tart!!



Rock Creek Tournament 2018. This girl was 30" and she won us the 2nd biggest Walleye caught and we ended up 12th place overall.

Eric and I fish a lot of Walleye tournaments together up on Fort Peck Lake in Montana in the summertime. It's always a 4:30 or 5 am wakeup to get ready for an early take-off time. It's freaking amazing to have a good, hearty breakfast on hand because let's be real neither one of us is moving too quick that early in the morning. So I always have the coffee and breakfast burritos ready ASAP! I love to warm up extra and toss them to other fishermen while we are sitting in the water waiting for our take-off time.


They are so easy to prep and freeze. Just toss them in the cooler and go. Warming them up is really easy if you're out fishing, hunting or camping. If we aren't at our cabin I just heat them up on our Blackstone Tailgater stove. That grill is awesome by the way. We take ours with us everywhere. To get started I brown my sausage in a large skillet and make sure it's cooked all the way through. I like my sausage a little bit crispy. If you are lucky enough to have wild game breakfast sausage use that! These burritos are even more delicious when they are filled with elk or deer sausage. As soon as the sausage is cooking, I lay my bacon on a tinfoil lined cookie sheet and put it in the oven on 350 for about 15 minutes. I love to bake my bacon. It's so much less mess to clean up! I just wrap the tinfoil up and throw it away. No stove to clean up and no greasy pan to scrub! When both meats are cooked through I scoop them onto paper towel lined paper plates and blot the rest of grease with paper towels. Chop your bacon into small pieces (bacon bits).


Next, I get to work on my egg mixture. I mix the eggs with the milk, half & half, salt & black pepper, paprika, dry mustard and garlic powder. Whisk all of that together and then pour it into a large sprayed skillet. Make sure your stove in on medium heat and keep stirring until you have a scrambled egg mixture. Don't overcook your eggs or they will be too dry.


When your eggs are cooked take them off the hot burner and add the sausage, bacon and cheese. Mix well. Let the mixture cool a little bit before you start filling and wrapping your burritos. This will keep the tortillas from getting soggy.


This recipe makes 6 breakfast burritos. Make sure you get the large burrito size flour tortillas because anything smaller will tear. I like to put all six burritos in the microwave for about 15 seconds just to get them a touch warm because it seems like they are easier to maneuver that way. Once you have them all wrapped let them cool for just a few minutes on the counter. Next wrap them in plastic wrap and then wrap them in tinfoil. This helps them keep better in the freezer. Just make sure you write with a black sharpie on the tin foil to take the plastic wrap off before you heat them to eat!! I know if I skipped this step I would forget about the plastic wrap and then I'd have gross mess on my hands and a ruined breakfast!


You can put these guys in the freezer, but stack them in a single row not on top of each other.

To warm them up you can take them out of the plastic and the tinfoil & wrap them in a paper towel and heat in the microwave for about 2 minutes. Or you can put them in the oven or on a grill like I said above. JUST DON'T FORGET ABOUT THE PLASTIC WRAP. I take the plastic wrap off and then wrap them back up in the tinfoil to heat.

You can serve them up with salsa or hot sauce. Enjoy!!
